Boundry Ranch Bannock & Steak Rub

After heading back from a trail ride, try one of these authentic cowboy recipes

 

Ingredients

  • 2 cups (500 mL) flour
  • 4 tsp (20 mL) baking powder
  • 1 tbsp (15 mL) sugar
  • 1/2 tsp (2 mL) salt
  • 2 tbsp (30 mL) shortening
  • 3/4 cup (175 mL) canned condensed milk or heavy cream
  • Melted butter and icing sugar, or maple syrup for dipping

Directions

Boundry Ranch Bannock:
Preheat oven to 400 F (200 C).
Mix dry ingredients in a bowl. Add shortening and work together with hands or a pastry cutter until crumbly. Add milk and mix until dough forms. Turn out on a floured board and knead lightly. Pat into 3 rounded cakes, about 1/4″ (5 mm) thick. Place on ungreased cookie sheets and poke a hole in the middle of each cake. Bake at 400 F (200 C) for 20 minutes, or until risen and golden brown. Brush with melted butter and sprinkle with icing sugar or serve with maple syrup for dipping.

Steak Rub:
Boundary Ranch doesn’t use a
rub or a marinade–instead, they season each steak with salt and pepper, and a sprinkle of Lawry’s seasoning salt with an added pinch of garlic powder.
